Best Pizza Ever

Nick and I love to cook. One of our favorite meals is homemade pizza.

The secret to an AMAZING pizza is homemade pizza dough.



Here is the best recipe:
1 Cup Warm Water
1 Packet of Active Dry Yeast (2 1/4 teaspoons)
1 1/4 Teaspoons Sugar
3 1/4 Cups Flour
1 3/4 Teaspoons Kosher Salt
1/4 Cup Olive Oil, Plus More As Needed


Pour the warm water into a bowl. Sprinkle the yeast and sugar over the water and stir. Let stand until the yeast dissolves or swell, about 5 minutes.

Combine 3 cups of flour and the kosher salt into a large bowl Add the yeast mixture and olive oil. Stir with a wooden spoon until the dough comes together. Turn the dough onto a floured surface and knead for 15 minutes. If the dough is sticky, add the remaining flour 1 tablespoon at a time until the dough is no longer sticky.

Put the dough in an oiled bowl and turn it at least once to cover all sides with oil. Cover with plastic wrap or a kitchen towel and let rise in a warm place for 1 1/2 hours.

Who doesn't love New York in the Fall? I was in the city for work last week and had to take a few pictures. Emily this is for you. My NY trips are not the same now that you and GC are gone! Who else can I share a rum-a-rita with or crash a Fordham alumni event?

Summer is Almost Over (Part 2)

Here are some of my favorite pictures from Santorini. What a beautiful and romantic island. Nick and I spent most of our days relaxing and drinking. I came back with an amazing tan and Nick… well let’s just say Nick came back with some severely burned ankles! And I have to say for the men who read our blog… every guy should own a pair of Reef flip flops, which have a beer bottle opener on the bottom of each shoe! I know I laughed at first too, until we were at the beach with our Mythos beer, and discovered we had no bottle opener. Then Nick “always thinking” Carrillo, took off his shoe and saved the day!

Summer is Almost Over

Where did the summer go? It’s hard to believe summer is almost over and I hardly have tan lines! Before you start feeling sorry for me, I though I would rewind the clock and think back to the beginning of summer when Nick and I embarked on an amazing adventure: London & Santorini. Ready for Summer

For the last year, Nick and I have been home renovators… well you can’t exactly renovate a rented apartment, but we have put a lot of time and skill into DIY home improvement projects. One room we have been avoiding like the plague is our patio. After our trip to London, we were inspired to tackle the dread space and have transformed the once desolate patio into a cozy English garden. Bring on the heat, we are officially ready for summer.

Oh… and BTW did I mention we bough a Weber? Our salute to Bill Spiteri, who is the master of fire. Check out the pictures below of the first meal we cooked.

After years of fighting it…. I have finally decided to give in and start a blog! With friends living all over the world, and parents who live hundreds of miles away, I figured now would be a good time to start sharing with everyone what goes on in the world of Nick and Jenn. For the most part we are boring people, but every now and then we embark on a new adventure.
